Candied Walnuts
This was from the recipe I linked to before, part of the pear and rocket (aragula) salad. I had some of the candied (caramelized) walnuts left over, and through the next few days I nibbled on them. They’re amazingly easy to make — takes about 5 minutes — and are utterly delicious.

So delicious in fact that I then candied the rest of the packet. It only takes a few minutes to cook them, then you need to wait until they’re cooled and the candy has set, and that’s it! Yum yum. And I’m not all that keen on walnuts.
I’ve decided to make some for little Christmas gifts, packed in small pretty jars.
Ingredients: (I plan to double or triple the quantities when making them for gifts,)
* 100g/1.5ozs walnut pieces
* 30g/1oz caster or superfine sugar
* 2 teaspoons/10g/0.3ozs butter
Method: Line a baking tray with parchment paper. Place a non stick pan on medium heat and add the sugar and butter and stir. When the butter has melted add the walnuts and stir to coat the nuts with the sugar constantly turning them and coating them so that they are coated all over with the toffee mix. When the sugar has browned and has coated the nuts scoop the nuts onto the parchment lined tray and make sure that they are separated (just use the spatula). When they cool they’ll harden up and they will last for 2-3 weeks in an airtight jar.
Oh dear, I fear this is turning into a cooking blog. But that’s because of the season. I promise I’ll get back to talking about writing soon.















Thanks for this recipe. Nuts are a favorite food in my family. I will try this as I love sweets but not too much at once. This way it is somewhat healthy.
